frozen meal suggestions?

In the next couple weeks, Drake and I are hoping to cook up several meals that freeze well that we can have ready to go for when the baby arrives.  It's going to be a really chaotic (beautiful, but chaotic) time, and I don't want to have to do much for meal prep those first few weeks as we're adjusting.

Any recipes/meals you might recommend that freeze and reheat well?

  1. This is one of my favorite things to do (and it was always my mom's favorite trick, she'd make double the amount of everything and freeze one)... Lasagna that you prepare and freeze and then just bake is ALWAYS good out of the freezer. Also enchiladas are fantastic out of the freezer, again, just prepared and then baked when you pull it out of the freezer. You also can make both of these last for a few meals cause they're super good leftover (and I'm not one for leftovers).

If I think of others, I'll send you an email! I'm glad to see things are going well since your move!

  3. chili is great. also, we make "krautburgers", I could send you the recipe, they are easy to make. You can make bread dough or buy frozen rolls, fill them with ground beef, some cabbage and carrots. So good reheated, we love dipping them in mustard. I know some people assemble frozen ingredients into a bag and then throw it into a casserole dish, but I've never done that. I'm sure you could google it.

  5. Yep, i made the black bean burger dough and then just froze that in indiv. sized bags. I am in the midst of freezing TONS of pesto, easy to add to pizza or pasta. Soups, chilis, make some bread and freeze, the list goes on and on. Oh! Pepperoni rolls, muffins, etc. Maybe do some canning of tomatoes, beans...?

  6. Shredded chicken or pork in the crockpot for tacos or sandwiches freezes well, and doesn't take alot of effort. You can cook it and reheat it in the crock. Navy bean soup is great and cheap. Good breakfast freeze items are individually portioned pancakes, muffins, and quick breads.
